Nelson Coffee Roasters was founded in 2014 in Eastbourne, East Sussex, by Lucy and her husband after a life-changing cup at a specialty coffee shop in Nelson, British Columbia, during their honeymoon. The name honours that moment.

For the first six years they ran a café only; in 2020 they added roasting, bringing over 14 years of combined industry experience to the production side. The Eastbourne café is open 7 days a week at Station Parade, functioning as both the roastery's public face and a brunch destination.

The business has been recommended in national newspapers and was notably cited by women's world number 1 tennis player Ash Barty as her favourite café in the world. They supply subscriptions nationally and sell wholesale to other cafés and restaurants.
